To truly know someone you have to do quiet mundane things. Yeah sure going out and having fun is great don't get me wrong. But it isn't as important to your future as doing the simple things together, seeing how you interact during the normal moments. Don't pack every meeting with an activity, just take a walk and talk. Cook together or do laundry, listen to music. See what it's like to live your life with this person by your side.
