Text: Salmonella is a facultative anaerobic bacteria and over 2000 serotypes are encountered. While Salmonella is usually heat-sensitive, it does acquire heat resistance in high-fat environments such as peanut butter. Most of the infections are caused by Salmonella enterica (Salmonella typhi) or Salmonella schottmuelleri (Salmonella Paratyphi).
